Effortless Herbal Recipes for the Festive Season

PINK GIN AND ROSEMARY SPRITZ 

A festive cocktail that seamlessly blends with the aromatic charm of fresh rosemary.

INGREDIENTS
  • 60 ml Gin
  • 30 ml Fresh Cranberry Juice
  • 30 ml Freshly Squeezed Lemon Juice
  • 15 ml Sugar Syrup (adjust to taste)
  • 3-4 sprigs of Fresh Rosemary
  • Chilled Lemonade
  • Ice Cubes
  • Fresh Cranberries and Rosemary sprigs for garnish

METHOD

In a shaker, muddle a couple of rosemary sprigs to release the aromatic oils.

Add gin, fresh cranberry juice, freshly squeezed lemon juice, and sugar syrup to the shaker.

Fill the shaker with ice and shake well to chill the ingredients.

Strain the mixture into a glass filled with ice.

Top it off with chilled lemonade for a refreshing fizz.

Garnish with fresh cranberries and a sprig of rosemary for a festive touch.

Or try this alcohol free, by swapping out the gin for an Elderflower Fruit Syrup (such as Barkers).

 

FESTIVE RASPBERRY AND THYME SHORTCAKE 

Our delectable Raspberry and Thyme Shortcake. This easy-to-make treat combines the freshness of raspberries with the earthy notes of thyme, creating a dessert that is as visually stunning as it is delicious.

INGREDIENTS

400g Softened Butter
2 Eggs
2 tsp Vanilla Essence
4 Cups Flour
4 tsp Baking Powder
3 Cups Frozen Raspberries
1 Cup White Chocolate Buttons
3 Tbsps Thyme Leaves

METHOD

Cream the butter and sugar. Add eggs 1 at a time. Add vanilla and mix well. Fold in the flour and baking powder.

Press 2/3 of the mix into a large slice tin. Sprinkle berries, thyme and white chocolate evenly over the mix and then crumble remaining mix on top.

Bake for 30-40 minutes at 180 degrees.
